Derrière Orizaba se dressent les premières collines et montent plus haut, jusqu'à arriver dans les vallées escarpées de la Sierra. Les pentes sont abruptes, et les nuages y restent visibles accrochés. Au soleil, les vallées se réchauffent en revanche. Cela rend la culture du café difficile, surtout pour les Naturals.\u003c\/p\u003e\n\u003cp\u003eLes cerises sont cueillies et fermentées dans des sacs plastiques, avant de sécher sur des lits surélevés. Parce qu'il fait souvent froid, le séchage dure très longtemps. Et parce qu'il est souvent humide, le risque de pourriture augmente. Une attention particulière est donc requise ici.\u003c\/p\u003e\n\u003cp\u003eLe goût reflète tout cela : l'acidité fraîche et juteuse provient des conditions de culture, car les températures froides font que les cerises mûrissent longtemps. La fermentation de 90 heures souligne un caractère de fruit frais avec un accent sur les baies rouges, sans surcharger l'acidité. La texture soyeuse et élégante provient de la récolte soignée et du tri manuel des cerises.\u003c\/p\u003e\n\u003ch2\u003ePourquoi avons-nous acheté ce café ?\u003c\/h2\u003e\n\u003cp\u003eDepuis 2022, nous travaillons avec Ensambles et les productrices de Citlal Kafen pour améliorer la qualité du café et renforcer la coopérative. Le Toca est le mélange de coopérative lavé. Mais l'objectif a toujours été aussi de produire des microlots.\u003c\/p\u003e\n\u003cp\u003ePour cela, des lots individuels de cerises à café particulièrement de haute qualité sont séparés, fermentés et séchés en cerises en tant que Natural. C'est un nouveau procédé, non seulement pour la coopérative, mais pour toute la région.\u003c\/p\u003e\n\u003cp\u003ePour les projets à long terme qui doivent créer un changement perceptible sur place, il est important que cela produise aussi des cafés qui jouent sensoriellement en ligue des champions. C'est ici le premier lot que la jeune coopérative a ainsi transformé.
